Regenerate all compose files with version updates

- prysm v7.1.3, lighthouse v8.1.3, java-tron v4.8.1
- Add zero-gravity/aristotle chain (chainid 16661)
- Add tempo/mainnet compose files
- Add tempo to chainid exempt list (uses named chain specs)
