Enables the coreth debug API in every avalanche chain config we deploy so the dshackle debug group (advertised again via vibe-node context.yml client_api eth,net,web3,debug) is actually served. Canary: rpc-de-22 (not routed) restarted with the pruned config. Needs an avalanche container restart on rpc-de-14 and rpc-us-50 after deploy (bind-mounted config).

avalanche C-chain configs: debug-api-enabled true (mainnet pruned/archive/firewood, fuji pruned/archive) so the advertised dshackle debug group is actually served (dRPC routed 110 debug_trace* calls/day into method-not-available) 2960ac3480

avalanche C-chain configs: select APIs via eth-apis (defaults + debug/debug-tracer/debug-file-tracer/debug-handler); the legacy *-api-enabled flags are ignored by avalanchego 1.14.2 (canary rpc-de-22: debug_trace* now served) eee8bc13de
