Hand-maintained asset for StakeSquid/vibe-node#2285.

Bumps rpc/erigon3.Dockerfile ARG VERSION from v3.4.4 to v3.5.3 to match the context.yml client_version bump.

Changelog: https://github.com/erigontech/erigon/releases/tag/v3.5.3 — pure bugfix release, no breaking changes, no hardfork/network-upgrade announced.

Verification: ./update.sh ran clean with this asset present (recorded update-verify.txt); regenerated compose discarded per policy.

Rollout plan: erigon3 is dormant on ethereum.mainnet (0 of 22 fleet hosts run it — mainnet EL is geth/reth-pruned). Deploy/canary N/A; merge alongside vibe-node#2285, deploy-compose-repo will pick up the new gitlink on next regen regardless.

Merge together with StakeSquid/vibe-node#2285.
